When you hear the word ‘cafe,’ the smell of coffee might be the first thing that comes to mind. No matter where a cafe is these spaces are almost always associated with the comforting scent of a fresh brewed pot. That scent is usually visually complemented with interiors that exude cozy warmth or chic modernity. The best cafes showcase these designs through exceptional lighting or a stunning view. They create an atmosphere of cleanliness and provide furniture that makes studying or lounging a pleasure. Cafes are where you feel at home, even if it’s your first visit.

This article presents contractors who have built and continue to build some of the most marvelous cafes in the country. Some of these contractors have created cafes featured in Architectural Digest’s list of Most Beautiful Coffee Shops in Every State, and they’ve won awards from magazines that feature news or events about coffee or anything related to coffee. Pegasus Construction

Since 1987, Pegasus Construction has completed over 850 ground-up commercial projects throughout the Southwest, including Arizona, New Mexico, Texas, Colorado, Nevada, Utah, and California. One of these projects is a Starbucks cafe found in a dual-purpose building that also houses a Smashburger. Designed by Valerio Architecture and Interiors, the Starbucks cafe was a 5,000 square foot project completed in 2016.

In addition to new construction projects such as this dual-purpose building, Pegasus Construction also specializes in tenant improvement, remodels and renovations. Such services are usually completed for retail shops, restaurants, warehouses, storage facilities, office spaces, industrial, car washes, and hotels. Along with these many projects, the firm has also constructed buildings for Denny’s, Krispy Kreme, and McDonald’s.


ARKANSAS

Stronghold

In Arkansas, Stronghold is probably best known for its work on the Onyx Coffee Lab. Recognized by Imbibe Magazine—a culinary magazine—as the 2016 Coffee Bar of The Year, this coffee shop has a beautiful white vintage hexagonal tiled coffee bar, mocha color tufted leather sofas, and coffee tables made of fallen tree stumps. The cafe also has wide windows that allow light to pour in, and the ceiling is lined with timberwork that conceals thin lights. With the right natural lighting, the combination of LED lights and timberwork generate a comforting illusion: sunlight appears to be coming from the ceiling. Onyx Coffee Lab was the right choice to represent Arkansas in Architectural Digest’s list of Most Beautiful Coffee Shops in Every State in America. In addition to commercial contracting projects like the Onyx Coffee Lab, Stronghold also does residential contracting, custom stonework, custom cabinetry, and commercial masonry alongside commercial contracting.

Although the firm was only established in 2007, its team members have extensive backgrounds in construction and come from educational backgrounds in architecture, art, and business. Currently, Stronghold has Curt Richardson and Tom Hoffman at its helm.


CALIFORNIA

Buck O’Neil Builders Inc.

Featured in industry publications like Traditional Home, GB and D, and CA Home + Design, Inc., Buck O’Neil Builders Inc. was the firm that built the Saint Frank coffee shop on Russian Hill. Designed by OpenScope Studio, this coffee shop was given a Merit award from the AIA of San Francisco and was featured in several publications like Dwell, Eater San Francisco, SFGate, and the coffee website Dear Coffee, I Love You. It was also featured in The Daily Meal, where it was included on the list of America’s 50 Best Coffee Shops for its delicious coffee, state-of-the-art, under-the-counter espresso machine, and the shop’s open, modern and minimalist design. Buck O’Neil Builders had a number of goals in this project, but most notably it created the chevron at the wall to floor connection using engineered flooring, built custom cabinetry for the bar and back bar and renovated the kitchen, bathroom, office, and storage room to make better use of space. The firm specializes in residential remodeling, home building, large scale renovations, and small design-build projects.

The firm is also experienced in modern architecture, landmark construction, and Victorian restoration while incorporating sustainable building practices. Currently, it is headed by founder and owner Buck O’Neil who founded the company in 2004 with a LEED Green Associate certification and a CGBP. Aside from his certifications, O’Neil has been in the building industry since 1995. He has extensive experience in construction management, a passion for crafting great architecture and design, and a natural business sense.


COLORADO

Ivan Stanley

Ivan Stanley is currently headed by founder Jeremy Fischer. A graduate of the Savannah College of Art and Design, Fischer has a B.A. in historic preservation. Fischer incorporates his passion for classical architecture into all of the buildings the 22-year-old company has built. Among the firm’s many distinguished projects in the Summit-Eagle-Vail regions of the central Colorado Rockies, the firm built a cafe called the Cream and Steam Coffee House by completing some restorations on an 1800s-era cabin. Other projects helped the firm win six Summit County Parade of Homes awards, including the 2012 Best Builder Concept and Workmanship for its work on Keystone Ranch. 

Currently, the firm specializes in small to large custom home construction, full home remodels, and historic restorations that display the firm’s specialized knowledge of high alpine construction. The firm is a member of the Summit County Builders Association (SCBA).


CONNECTICUT

JCS Construction Group

A great example of its general contracting work is Le Pain Quotidien. This project had JCS Construction Group complete the full-service restaurant from the exterior to the beautiful European style cafe featuring woodwork reminiscent of the designs used by 19th-century European bakeries. Alongside projects such as the Le Pain Quotidien, JCS Construction Group is known for its millwork, residential construction, and commercial construction—services offered since the company’s inception in 2005.

The firm often works in the hospitality, corporate, retail, and restaurant sectors. Although it was only recently established, the firm is a member of the National Association of Home Builders (NAHB) of Connecticut, the National Association for Industrial and Office Parks (NAIOP) commercial real estate, the Real Estate Finance Association, and the Urban Land Institute. Currently, it is headed by founder Justin Shaw. Before starting JCS Construction Group, Shaw graduated from Fordham University with a B.A. in Economics and Finance. He then went to work for a commercial real estate brokerage firm in New York. DELAWARE

BPGS Construction

Led by firm principal H. Wesley Schwandt, BPGS Construction was established in 1999. Currently, the company serves the Mid-Atlantic region where it has built for the commercial, residential, institutional, and industrial sectors. When it comes to cafes, the firm’s most notable work might be the Starbucks on the Riverfront. 2,200 square feet wide, this cafe has luxurious nautical finishes that pay tribute to the location’s roots through reclaimed wood, an overhead rope featuring porthole paintings, and a large historical painting of the riverfront. Adding to these features is a touch of luxury from the wide fireplace set in one corner of the space as well as the large windows that allow light to pour into the beautifully designed space. 

It may be due to shaping spaces like this that BPGS Construction was featured in Nashville Post and won several awards, including ABC’s Excellence in Construction Merit Awards in 2018, two Excellence in Construction awards in 2017, and one 2017 Merit Award.


FLORIDA

EWI Construction

A firm that usually builds residential buildings and restaurants that include cafes, EWI Construction was formed by Casey Ellison and Anthony Italiano, a pair responsible for identifying and developing real estate opportunities throughout the U.S. and Mexico. Currently, Sam Ellison leads the firm. With 40 years of experience, Ellison possesses the know-how for pre-construction, project management, and the entire construction process. Aside from leading various international business missions, Ellison is a former chairman of the Tampa Chamber of Commerce. The firm’s team won Florida Trust for Historic Preservation’s 2012 Contractor of the Year Award and the 2013 Outstanding Achievement award.

Wins like this come from team leadership but also from the kind of close-knit work culture that allows a firm to overcome various construction challenges. Of the firm’s most notable cafe works is Buddy Brew Coffee. The spot was featured on Sprudge.com, a website that publishes features that highlight coffee culture, news, and events. This newly expanded space took up the entirety of a building built-in 1955. EWI removed the old drop ceilings to expose the original wood rafters, then added a seating bar where the picture windows could be better appreciated. The original terrazzo floor meanwhile was retained, and the firm used reclaimed materials like scaffolding planks for the retail shelves. The communal table and seating bars were built with salvaged cypress wood reclaimed from the Tallahassee river.


GEORGIA

Choate Construction

This firm is known for consistently ranking in Engineering News-Record (ENR)’s annual listing of the top 400 general contractors. Established in 1989, Choate Construction has a management style where executive management and field employees have complete accessibility and easy communication that allows for a collaborative exchange of ideas and knowledge. One result of the firm’s expertise is Corso Coffee. An Italian style coffee bar in Atlanta, this 1,590 square foot boutique coffee and wine shop is adorned with custom tiles, brass and woodwork. There is a bar where drinks are served; there is an ice cream counter; there is a large community bench with one-legged tables for customer seating.

Aside from its ENR ranking, Choate construction was also featured in several magazines such as Building Design + Construction, Atlanta Business Chronicle, and Atlanta Journal-Constitution. In addition to features within these publications, the firm also won two first-place Build GA Awards from the Associated General Contractors (AGC) of Georgia where it also holds a membership. Currently, the firm is led by chairman and CEO Millard Choate who was chosen both by Ernst and Young, Inc. Magazine and Merrill Lynch as Entrepreneur of the Year. Consider the industrial styled Morning Glass Coffee + Pastry. An open-air venue where its interior design plays with exposed pipelines, it has the notable feature of copper lighting hanging above a long wooden bar, and its pastel-colored chairs are woven together with steel. Pacific Precision Builders has a large client base filled with repeat clients and referrals, and Morning Glass Coffee is a great example of why. This firm is best known as a design-build improve enterprise that specializes in residential new construction, remodels, additions, and commercial spaces. It is a member of the Building Industry Association (BIA) of Hawaii and the Hawaii Real Estate Investors and is owned by Jon Mosher. 

Like his company, Mosher has been working in the construction industry for over 20 years. During this time, he has learned how to draft architectural plans, do masonry work, finish carpentry, build homes from the ground up, and create fine woodworking products like doors and cabinetry. Mosher’s experience informs his versatile creativity, and it shows in gorgeous spaces like the one pictured here.


IDAHO

HC Company Inc.

Founded in 2002, HC Company Inc. does general construction and construction management services for various sectors including medical, industrial, office, retail, high tech/production, education, multi-family, entertainment, and restaurant. One example of the firm’s diverse projects is the HP Corporate Coffee Shop. Though it carries a simple design with minimal displays, its most notable features are the walls bathed in bright yellow and orange, bright shades that help wake up early visitors dodging in for a quick cup of coffee.

Currently, the firm is a member of the U.S. Green Building Council (USGBC) and has Dan Hayes as president. In addition to being a graduate of Oregon State University’s Construction Engineering Management and Business Programs, Hayes also has a LEED AP Accreditation. 


ILLINOIS

LG Construction + Development

Once known as LG Homes, LG Construction + Development was established in 2008 and serves as Chicago and Evanston’s premier, full-service general contracting and development firm. In 2015, the firm branched out by creating a third sister company,  LG Advantage Group which offers service, maintenance, and remodeling. Founding partner Brian Goldberg currently serves as CEO and for the last 17 years, has been developing, constructing, and renovating over a billion dollars in high-end residential and commercial projects in Chicago. The firm has been featured in several publications which include Construction Today, Curbed Chicago, Chicago Tribune, Architect Magazine, and Eater Chicago. The firm also won AIA’s Small Project Award for its work on Little You, Inc., a single story, solid masonry therapy building in Mt. Greenwood.

Another example of the firm’s impressive work is the Limitless Coffee and Tea Flagship Store at  Fulton Market. Bathed in pure white and bright lights, this 2,500 square foot wide cafe’s most notable feature is the high ceiling where two rows of skylights are set in its center to allow just the right amount of natural light into the space. The shop also has numerous floating tables attached to the white walls, maximizing the space in an aesthetically pleasing way.


INDIANA

Capitol Construction

Because he is able to create strong bonds with clients through clear communication and top-notch service, the firm has served repeat clients and has constructed buildings for brands like Panera, Red Robin, and Starbucks. The latter is one of the firm’s oldest clients.

For many years, the firm has helped complete ground-up stores, interiors, and remodels for the Starbucks brand throughout the Midwest. One of these branches was designed by Interbrand Design Forum and was previously a Wendy’s. Capitol provided renovations to its exterior facade and drive-thru in addition to a full 3,000 square foot interior remodel.


IOWA

Kennedy Construction

KANSAS

Complete Construction Service

MAINE

Wright Ryan

Back in 1970, founders Tom Wright and John Ryan merely talked about working with people who cared about each other and shared a commitment to excellence. But after Wright Ryan’s inception in 1984, the firm grew into one of the largest and most respected construction firms in northern New England. The has won countless awards over the years. The Village Center Apartments project won Novogradacs Journal of Tax Credits’ Development of Distinction Award for Rural Community Impact. In the previous year, the firm won Greater Portland Landmarks’ Preservation Award for its work on The Press Hotel. 

In 2015, its most notable cafe project—The Mill at Dover-Foxcroft—received a Maine Preservation Award for Excellence in Adaptive Use and was recognized by the Maine Real Estate and Development Association as one of the most notable commercial developments in 2015. Designed by architect firm Clockwork Architecture + Design, this 60,000 square foot historic mill property was renovated and turned into a mixed-use building. It has residences, office space, a boutique inn, and a cafe. The work included sandblasting existing wood, concrete and brick surfaces in preparation for complete restoration and renovation. Currently, the firm has worked in the athletic, civic, commercial, cultural, healthcare, higher education, hospitality, historic, k-12, millwork, multifamily housing, and non-profit sectors. John Ryan serves as its current head. In addition to being the co-founder, Ryan comes from an engineering background and has nearly 30 years of experience in the executive management of engineering and construction projects.


MARYLAND

Teel Construction Inc.

Teel Construction Inc. may be based in Virginia but it has become such a well-known construction firm that it also services North Carolina, New York, Ohio, and Maryland. Established in 1987, Teel Construction Inc. has become a firm where 97% of its work comes from repeat clients. Currently, Parker Teel serves as its CEO. A graduate from Lynchburg College, Teel has done several major projects like the Foxchase Shopping Center, dining rooms and kitchen additions to Chez Francois, and Bethesda Naval’s Special Procedures Unit. Teel is also a member of the Northern Virginia Chamber of Commerce and the ICSC. 

It has also built projects for familiar names like Ralph Lauren, Macy’s Lacoste, and Dunkin’ Donuts. Its most notable cafe project is Vino Volo in Bethesda. A wine bar, a retail shop, and a cafe, this branch of Vino Volo was designed in collaboration with Collective Architecture and carries a country chic design. The project made use of reclaimed barn wood from Missouri for interior millwork components and the storefront. Inside, a 55-seat dining room overlooks a 12-seat customer zinc bar top. Behind the bar, you’ll find a backlit feature wall separating the bar/dining room areas from the retail wine shop.


MASSACHUSETTS

Trinity Building + Construction Management Corp.

In 2005, partners Matthew Kilty, Paul Mancini, and David Story established Trinity Building + Construction. The firm’s offices are in Massachusetts and New York, but it has a portfolio of diverse projects that have been built in 19 different states. This firm provides clients with a number of services which focus on hospitality, retail, multifamily, and corporate segments of the commercial construction market. Currently, the firm is led by company president Matthew Kilty who has over 20 years of experience in the hospitality, retail, corporate, and academic markets. As expected, Kilty has an arsenal of impressive knowledge that helped him take an active role in the management and development of Trinity’s team.

When it comes to building restaurants, the firm has the skill in building a range of structures that extend from small, privately owned eateries and fast casual chains, to luxurious fine dining establishments. Some of these projects include several Au Bon Pains in Massachusetts and New York, and the Khofi kiosk at Boston’s 125 Summer Street. Featured here is Caffe Nero in Jamaica Plains, Massachusetts. A 2,500 square foot space, this Caffe Nero branch was finished by Trinity on an 11-week schedule. Though only recently established in 2014, Plumb Level Square was already featured in industry magazines such as Architectural Digest, Architect, Seattle Business, and Bon Appetit, and the online coffee news and culture website Spurge. One example of the firm’s well-known works is Seattle’s Sound and Fog Cafe designed by architecture firm, Allied 8. Against a white and gray palette, the design focuses on the black wooden bar topped with white marble that takes up about a third of the space. Along with ample seating, the cafe has giant windows that open into what would become a future park offering lots of light and a refreshing view. Since its establishment, the firm has completed more than 100 different commercial and residential projects with well-known designers such as Distinctive Kitchen’s Allison Scheff, and Union Adorn’s Lauren Caron.

A 9,726 square foot structure that required tenant improvement services, it is a casual, European style cafe carrying a warm and snug atmosphere. 

This cafe is nestled inside a food/coffee/beer/wine/cigar shop and was featured in Volume One magazine. Projects like these helped the firm win the Eau Claire Chamber of Commerce 2013 Small Business of the Year award. Dohn Construction Inc.

Though based in Colorado, this firm has built over 245 buildings across Northern Colorado and Southern Wyoming and specializes in both residential and commercial work. This firm has over two decades of experience in the Northern Colorado construction industry and has built many amazing projects. Just one worth mentioning is a Starbucks coffee shop done in Cheyenne, Wyoming. Completed in 2016, this was the only Starbucks in the capital city with a drive-thru. As a result of that unique feature, this shop was featured in Wyoming News and KGAB Radio’s online site. Aside from this project that easily captured the establishment’s signature look, Dohn Construction Inc. was also responsible for Ginger and Baker at Fort Collins, Colorado. A three-story, 106-year old building was renovated to make room for this new facility.
